Ingredients
1 qt. water
100 medium to large dandelion flower heads (about 3.5 oz.)
2 apples, cored and cut into chunks
¼ cup freshly squeezed lemon juice or less
Pinch salt
3 1/2 cups white or light-brown cane sugar
1 bunch (30 to 40 flower heads) edible, aromatic flowers, optional
Directions
- Pour the water into a pot and add the dandelion heads, apples, lemon juice, and salt. Cover and boil gently for 20 to 30 minutes.
- Strain out the flowers and apples, saving the liquid in a pan. Pour in the sugar and simmer on low, uncovered, for several hours until reaching a honey-like consistency. Stir occasionally during the first hour.
- Remove from heat and pour into containers.
