Vegan Dandelion ‘Honey’

Ingredients

  • 1 qt.  water
  • 100 medium to large dandelion flower heads (about 3.5 oz.)
  • 2 apples, cored and cut into chunks
  • ¼ cup  freshly squeezed lemon juice or less
  • Pinch salt
  • 3 1/2 cups  white or light-brown cane sugar
  • 1 bunch (30 to 40 flower heads)  edible, aromatic flowers, optional

Instructions

  • Pour the water into a pot and add the dandelion heads, apples, lemon juice, and salt. Cover and boil gently for 20 to 30 minutes.
  • Strain out the flowers and apples, saving the liquid in a pan. Pour in the sugar and simmer on low, uncovered, for several hours until reaching a honey-like consistency. Stir occasionally during the first hour.
  • Remove from heat and pour into containers.

Makes about 3 cups
