Sweet Herbed Roasted Root Vegetables
Yams
Parsnips
Carrots
Yucca root
Maple syrup
Just Like Honey (available at www.suzannes-specialties.com)
Olive oil
Salt
Black pepper
Cayenne pepper
Fresh herbs (try sage, oregano, rosemary, and thyme)
• Preheat the oven to 350°F.
• Clean the vegetables and chop into pieces that are approximately the same size. Place in a large mixing bowl and coat well with maple syrup, Just Like Honey, and olive oil.
• Season the vegetables with salt, black pepper, and cayenne pepper and place on a sheet pan. Cover with foil and bake for 1 hour. Remove the foil and bake until starting to caramelize and turn brown, about 1 hour.
• Remove from the oven and immediately place in a large mixing bowl. While still hot, add the herbs and mix with a large wooden spoon and a spatula. Adjust the seasoning with salt and pepper and serve.
