Sweet Cream Topping
1/2 lb. firm tofu
1/4 cup oil
1/4 cup confectioner’s sugar
1 tsp. vanilla or coconut extract
1/2 tsp. lemon juice
1/8 tsp. salt
• Combine all the ingredients in a blender and blend until smooth and creamy. Chill before serving.
Makes 1 1/2 cups
