Rainbow Zucchini Rolls

Ingredients

  • 3-4 Tbsp.  hummus
  • 1-2 zucchini, thinly sliced lengthwise
  • 1 carrot, thinly sliced
  • 1 red, orange, or yellow bell pepper, cut into small pieces
  • 1/2 cup  chopped red cabbage
  • 1/2 cup  chopped cilantro
  • 1 pkg.  Tofurky Slow Roasted Thai Basil Chik’n (optional)

Instructions

  • Apply a thin layer of hummus to one side of each zucchini slice.
  • Top with the remaining ingredients, then roll and pierce with a toothpick to hold the shape.

Makes 10 to 20 rolls
