Quick BLTA Sandwich

Ingredients

  • 1 tsp. olive oil
  • 2 slices  vegan bacon (try Lightlife Fakin’ Bacon Strips)
  • 2 slices whole grain bread
  • 1 Tbsp.  vegan mayonnaise
  • 1 small tomato, sliced
  • Spinach, romaine, or other dark leafy salad greens
  • 1/2 avocado, sliced (optional)

Instructions

  • Heat the olive oil in a small skillet over medium heat. Add the vegan bacon and cook until golden on both sides.
  • Meanwhile, toast the bread. Spread with the vegan mayonnaise and top with the “bacon,” tomato, greens, and avocado.

Makes 2 servings

*Variation: If you like a little extra kick, try sprinkling on hot sauce or salt for more flavor.
