Peanut Noodle Salad

- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 Tbsp. sesame oil
- 2 Tbsp. Sriracha
- 1/4 cup water
- 1 Tbsp. ginger
- 3 cloves garlic, minced
- 2 Tbsp. brown sugar
- 1 pkg. pasta, cooked and drained (we used linguine)
- 1/2 cup shredded carrots
- 1 cucumber, thinly sliced
- 1/2 cup chopped green onions
- 2 bell peppers, thinly sliced (we used green and red)
- Sesame seeds, for garnish
Instructions
- Place the peanut butter, soy sauce, rice vinegar, sesame oil, Sriracha, water, ginger, garlic, and brown sugar in a large bowl and stir until well combined and smooth.
- Add the pasta and vegetables and stir until evenly coated.
- Refrigerate for 45 minutes. Don’t forget to top each serving with some sesame seeds!
