Excellent Eggless “Egg” Salad
1 1/2 lb. firm tofu, mashed
1/2 cup vegan mayonnaise
1/2 cup chopped fresh parsley
1/4 cup sweet pickle relish
1/2 medium onion, chopped
2 stalks celery, chopped
1 1/2 tsp. garlic powder
1 1/2 tsp. salt
1/4 tsp. turmeric
1 1/2 Tbsp. prepared mustard
• Combine all the ingredients in a large bowl. Spread on sandwiches or crackers.
