Curried “Chicken” Salad

- 1 cup Beyond Meat’s Grilled Chicken Strips, cooked and chopped
- 1/4 cup vegan mayo
- 1/3 cup celery
- 3 Tbsp. raisins or dried cranberries
- 3 Tbsp. sliced almonds
- 3 Tbsp. scallions, chopped
- 1/2 Tbsp. curry powder
- Juice of 1/2 lemon
- Pinch of salt
- Pinch of white pepper, or black pepper
Instructions
- Cook vegan chicken according to package directions.
- Combine all ingredients until mixed thoroughly.
