Chocolate Pudding
1 pack silken tofu (firm), crumbled
2/3 cup unbleached cane sugar
1/2 cup unsweetened cocoa powder
21/2 tsp. vanilla extract
Pinch of salt
Blend all ingredients in a food processor until creamy and thick. Chill.
