Ingredients

  • For the Vegan Cream of Chicken Soup:
  • 3 Tbsp. vegan butter

  • 1 Tbsp. all-purpose flour

  • 1/2 cup unsweetened vegan milk

  • 1/2 cup vegan chicken broth

  • 1 tsp. nutritional yeast

  • Sea salt, to taste

  • Ground black pepper, to taste

  • For the Casserole:
  • 1 32-oz. pkg. frozen tater tots, thawed

  • 1/2 cup vegan butter, melted

  • 10 oz. vegan cream of chicken soup (recipe below)

  • 16 oz. vegan sour cream

  • 1/2 cup finely chopped onion

  • 2 cups shredded vegan cheddar cheese

  • 1/4 tsp. pepper

Directions

  • Vegan Cream of Chicken Soup Instructions
  • Melt the vegan butter in a small saucepan over medium-high heat.
  • Add the flour and whisk until smooth.
  • Add the vegan milk, vegan chicken broth, nutritional yeast, salt, and pepper.
  • Bring to a boil and continue whisking for 2 minutes, or until thickened.
  • Vegan Casserole Instructions
  • Preheat the oven to 350°F.
  • Grease a 9-inch-by-13-inch casserole dish with vegan butter.
  • In a large bowl, combine the thawed tater tots, melted vegan butter, vegan cream of chicken soup, vegan sour cream, onion, 1 1/2 cups of the vegan cheddar cheese, and pepper.
  • Spread the mixture into the prepared baking dish and top with the remaining vegan cheddar cheese.
  • Bake 45 to 55 minutes, or until hot and bubbly.
