Eat Seasonally All Winter With These Hearty, Healthy Salad Recipes

If a big salad full of fresh, seasonal produce isn’t in your meal plan rotation for winter, I beg you to reconsider. In winter, some of my favorite veggies and fruits for salads happen to be in season—including root veg, winter squashes, bright citrus, and dark leafy greens. They’re also packed with micronutrients, which can keep you feeling healthy all season long. So, if you’re ready to eat the rainbow, here are some of my favorite vegan winter salad recipes that will get you through the coldest months.

Warm Winter Salad

Who said salads had to be cold? This recipe uses cauliflower, carrots, and fennel (one of my personal favorites), roasted until they’re tender but not too soft and then tossed with a Middle Eastern-inspired tahini dressing, baby spinach, and dukkah (a blend of Egyptian spices and seeds). For some extra protein, I’ve served this with some baked tofu.

Crispy Shaved Brussels Sprout Salad with Cilantro Lime Dressing

Here’s another warm, roasted salad to add to your rotation. It features shaved Brussels sprouts and thinly sliced delicata squash. The Chinese five-spice powder and fennel seeds boost flavor, while the tahini-cilantro dressing adds creaminess. You can eat this one as is or serve it over rice.

Winter Panzanella Salad with Kale and Roasted Squash

Traditional panzanella salads use fresh tomatoes and basil, but this winter-friendly version uses squash, Tuscan kale, and pomegranates instead. I love to serve this with some vegan feta cheese, which adds a creaminess without harming sheep, who are intelligent, social, emotional beings who feel love, joy, and pain, just as cats and dogs do.

Vegan Kale Caesar Salad

I make kale Caesar salad almost every week. It’s always satisfying, and I can toss it with some baked tofu or vegan chicken to make it more filling. I use a version like this, which features a dressing made from raw cashews rather than eggs and anchovies because chickens and fish don’t want to be exploited and killed for your dinner.

Chimichurri Celeriac & Lentil Salad

In my humble opinion, celeriac (also known as celery root) is a seriously underrated winter vegetable. While it’s great in a gratin, I love it roasted and tossed in a crunchy, herby salad like this one.

Vegan Roasted Beet Salad (With ‘Feta’ and Apple)

Beets are sweet, earthy, and lovely in this salad, which also features crisp apples, tofu ‘feta,’ and toasted pumpkin seeds.
