Crunchy Herb Seitan Croquettes With Fresh Basil
1 pkg. seitan or 2 cups homemade seitan
1 Tbsp. brown rice syrup
2 tsp. red wine vinegar
2 tsp. stone-ground mustard
2 tsp. extra virgin olive oil
2 tsp. finely chopped fresh rosemary
1⁄2 tsp. plus dash dried thyme
1⁄2 tsp. plus dash sea salt
1⁄2 tsp. plus dash ground pepper
1⁄2 cup almond meal
1 1/3 cups organic whole wheat breadcrumbs
2-3 Tbsp. neutral-tasting oil (refined coconut oil preferred)
4-6 leaves fresh basil, finely chopped
- In a large food processor, pulse the seitan, syrup, vinegar, mustard, olive oil, rosemary, and 1/2 teaspoonful each of thyme, salt, and pepper until well combined. Add the almond meal and 1/3 cup of the breadcrumbs.
- Place the remaining cup of breadcrumbs in a bowl and combine with a dash each of thyme, salt, and pepper.
- Form the seitan mixture into small patties and dredge in the breadcrumbs. Fry in the oil for about 4 minutes on each side, or until crispy.
- Top with fresh basil and serve.
Makes 4 to 6 servings
