Crossroads Kitchen, a favorite Los Angles hotspot for hungry vegans and omnivores alike, just blew our minds with a short (but oh so sweet) video showcasing its delicious fettuccine carbonara, which was recently named one of the best pasta dishes in the city. While the whole plate looks delicious, the real star of this dish is the vegan egg yolk sitting right on top. Watch for yourself now:

The “egg,” created with help from Top Chef winner Michael Voltaggio, is made from a whipped yellow tomato béarnaise sauce. As the fork pierces the “yolk,” the inside pours out onto the pasta. The result is undeniably impressive.
Angelenos are no strangers to vegan fare, and both celebrities and civilians sing the praises of Crossroads. The Huffington Post named chef and owner Tal Ronnen L.A.’s “Top Vegan Chef,” and LA Weekly called Crossroads the “Best Vegan Restaurant” in the city.
