Kale is one of the most nutrient-rich greens out there, and according to WebMD.com, one cup of it has “5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K.”
Kale can be tossed in olive oil and seasonings and then baked to form crispy chips that taste surprisingly indulgent.
Easy Kale Chips
Easy Baked Kale Chips

Ingredients
- 1 qt. chopped kale
- 1 Tbsp. olive oil
- 1/4 tsp. salt
- 1/2 tsp. garlic powder
Instructions
- Preheat the oven to 300ºF.
- Place the kale in a large mixing bowl and add the olive oil, tossing to coat.
- Sprinkle with the salt and garlic powder, then toss again.
- Place in a single layer on a baking sheet and bake for about 15 minutes, or until crispy.
Makes 2 servings
These chips can be enjoyed as a snack, or you can use them in a “whatever-I-can-grab” pasta dish. Chickpeas, lemon juice, garlic, and olive oil complement baked kale nicely, but mix and match ingredients to your liking.
