Vegan Confetti Quinoa Recipe
Ingredients
2 cups water
1 cup quinoa, rinsed
1/4 tsp. salt
1/2 large onion, diced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 tsp. vegetable oil
1/2 cup sliced water chestnuts
1/4 cup corn, cooked
Fresh coriander (cilantro), optional
Instructions
- Bring the water to a boil and add the quinoa and salt. Cover, reduce the heat to low, and simmer for 15 minutes.
- Sauté the onion and peppers in the oil until soft, about 6 to 8 minutes. Add them to the quinoa along with the water chestnuts and corn. Stir until well blended.
- Serve garnished with coriander.
