As colorful as it is delicious, this grain-based dish is an easy part of a hearty and healthy meal. Serve it as a side dish, or load up on veggies and make it your main course. Enjoy!

Vegan Confetti Quinoa Recipe

From The Compassionate Cook

Ingredients

2 cups water
1 cup quinoa, rinsed
1/4 tsp. salt
1/2 large onion, diced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 tsp. vegetable oil
1/2 cup sliced water chestnuts
1/4 cup corn, cooked
Fresh coriander (cilantro), optional

Instructions

  • Bring the water to a boil and add the quinoa and salt. Cover, reduce the heat to low, and simmer for 15 minutes.
  • Sauté the onion and peppers in the oil until soft, about 6 to 8 minutes. Add them to the quinoa along with the water chestnuts and corn. Stir until well blended.
  • Serve garnished with coriander.

Makes 4 servings
