Sometimes it’s nice to have breakfast at a diner—it’s cheap and reliable and the portions are hefty. However, it’s not always the healthiest or most vegan-friendly place to eat. So why not bring the diner home?
These Spicy Diner-Style Home Fries are crispy, spicy, vegan, and—best of all—healthy! So why not avoid the fat and calories in diner fries and whip up your own?
Spicy NYC Diner-Style Home Fries
4 large Idaho potatoes, scrubbed
Cooking spray
1/2 Tbsp. extra virgin olive oil
1 medium white onion, cut into medium-size cubes
1 Tbsp. garlic powder
1/2 Tbsp. onion powder
Cayenne pepper, to taste
Salt, to taste
Few grinds of coarse black pepper
2-3 Tbsp. finely chopped cilantro, optional
- Wrap each potato in microwavable plastic wrap and microwave for about 4 minutes, or until tender. Set aside to cool. Dice into medium-size cubes.
- Lightly coat a large skillet with cooking spray. Add the oil and set over a medium flame. Add the onions and sauté for 2 minutes. Add the spices and sauté until fragrant and the onions are soft, about 5 to 7 minutes.
- Add the potatoes. Sauté for about 3 minutes, cover, and cook for 5 minutes. This is when the potatoes will get crispy on one side, so adjust the flame to prevent burning.
- Uncover and adjust the salt and spices. Place in a serving dish and garnish with the cilantro if desired.
