As workers pull fistfuls of eggs from the insides of these sturgeons—the fish whose eggs are most commonly sold as caviar—it immediately becomes clear that there’s nothing luxurious about this vile food.

Decimated by fishing, depleted sturgeon populations in the Baltic and Caspian seas—the native waters of these sensitive, intelligent fish—have prompted caviar producers around the world to switch to industrialized aquaculture farms. These facilities, which are often filthy, keep sturgeons trapped inside enclosures in which they’ve no choice but to swim through their own waste and may suffer from rampant diseases. Female sturgeons—who feel pain and fear, as all animals do—are sometimes cut open while they’re still alive so that their eggs can be ripped from their ovaries.

But no matter how it’s obtained, caviar is always a product of cruelty and death.
