New Look for Columbia Student’s Dorm Restaurant: This Week, It’s Vegan!

He’s only 21, and he’s already grabbed headlines for running an exclusive supper club out of his Columbia University dorm room—and now, just in time for World Vegan Month (November), rising celebrity campus chef Jonah Reider is dishing up vegan meals with assistance from peta2, PETA’s youth division.
peta2—whose motto reads, in part, that “animals are not ours to eat”—is picking up the tab all week long for Reider’s Pith restaurant. This week’s dishes will include cauliflower soup seasoned with saffron oil and crispy Brussels sprouts, smoky Japanese eggplant served with charred red pepper, fresh pear sorbet, and more.
“With interest in vegan meals on the rise on college campuses across the country, it’s no surprise that one of the fastest-rising student chefs has jumped at the opportunity to cook delicious vegan food,” says peta2 Director Ryan Huling. “If someone this busy can run a five-star vegan restaurant out of a dorm room, just think what every college student can do with the many vegan foods now available—and peta2 is here to help, with quick and easy recipes.”
