Vegan sushi lovers have tons of delectable choices these days, since the options are only becoming more and more creative and exciting. While a standard avocado or cucumber roll can be delicious in its simplicity, it can be lots of fun to try new flavors and cooking methods. Nigiri is traditionally fish served atop a ball of sushi rice, but we know that fish feel pain. Fish should be able to stay with their families and live in peace, not be torn from their homes so that humans can eat their flesh. So instead of eating fish, top your homemade nigiri with this creative recipe for tomato tuna.
1. Soak a tomato in hot water until the skin can be peeled off, then peel off the skin.
2. Remove the seeds.
3. Slice thinly, then marinate in 2 tablespoons of soy sauce, 2 teaspoons of rice vinegar, and 2 teaspoons of maple syrup for 15 minutes.
4. Place each tomato slice on top of a ball of rice.
5. Dunk into soy sauce and enjoy.
