Cauliflower “Meatballs”

- 1 Cauliflower head
- 1 Onion
- 1 Cup flour
- Olive oil for frying
- Breadcrumbs
- 1 Tbsp pepper
- 1 Tbsp salt
- 4 Tbsp vegan butter (try Earth Balance)
Instructions
- Cook cauliflower for 30 minutes
- When soft and ready, chop cauliflower into small pieces
- Put the cauliflower pieces in a mixing bowl and mash until puréed
- Add vegan butter
- Finely dice the onion and add to bowl
- Add salt and pepper to taste
- Add 4 Tbsp. of flour and let stand for 10 minutes
- Shape mixture into balls, roll in bread crumbs and fry over low heat
- Ready to eat!
