When friends and families get together for the holidays, it often means a mix of dietary needs. And with more people than ever going vegan—whether for animals, the environment, or health reasons—it’s more likely than ever that most Easter gatherings will include at least one person at the table who’ll be passing up the honey-glazed ham and deviled eggs.
That’s why we hope you’ll share some of the recipes from PETA’s brand-new, all-vegan Easy Easter Brunch Menu with your readers, many of whom have likely been wondering how they can cater to their vegetarian or vegan guests.
The dishes include delicious entrées and delectable desserts and range from the super-simple (Creamy Chive Mashed Potatoes) to the more decadent and gourmet (Tiramisu Pancakes). Here are a few more:
- “Bacon,” Potato, and Green Onion Frittata: It has tons of flavor, will stick to your ribs, and is brimming with visual appeal.
- French Toast Casserole: It’s made with French bread and topped with a praline of pecans, cinnamon, and nutmeg—just pour on the maple syrup.
- Apple-Walnut Cake: It’s so perfect that your local baker just might ask you for the recipe.
All the recipes are available on PETA’s website. Thank you for keeping your vegetarian and vegan readers—and their hosts—in mind this year, and please don’t hesitate to contact me if you would like any further information. And of course, have a very happy Easter!
