An easy recipe for a great vegan chili!

Ingredients

  • 1 large can red kidney beans, rinsed and drained

  • 1 jar tomato paste

  • 1 small bowl dried soya pieces (soaked in hot water and soya sauce for 15 minutes) or defrosted

  • Realeat soya pieces

  • 1 cup water

  • 1 green pepper, chopped

  • 1 onion, chopped

  • Chillies (start with 1 or 2 and work your way up)

  • 1 tsp. fresh basil or 1/2 tsp. dried basil

  • 1/2 tsp. ground cumin

  • 1/4 tsp. salt

  • 2 cloves garlic, minced

  • 330 g hot cooked rice

Directions

  • In a large saucepan, combine all the ingredients except the rice. Bring the mixture to a boil then reduce the heat.
  • Simmer, covered, for 30 minutes, stirring occasionally. Serve with the hot cooked rice.
