Cheezy Tater Tot Casserole

For the Casserole
- 1 32-oz. pkg. frozen tater tots, thawed
- 1/2 cup vegan butter, melted
- 10 oz. vegan cream of chicken soup (recipe below)
- 16 oz. vegan sour cream
- 1/2 cup finely chopped onion
- 2 cups shredded vegan cheddar cheese
- 1/4 tsp. pepper
For the Vegan Cream of Chicken Soup
- 3 Tbsp. vegan butter
- 1 Tbsp. all-purpose flour
- 1/2 cup unsweetened vegan milk
- 1/2 cup vegan chicken broth
- 1 tsp. nutritional yeast
- Sea salt, to taste
- Ground black pepper, to taste
Instructions
Vegan Cream of Chicken Soup Instructions
- Melt the vegan butter in a small saucepan over medium-high heat.
- Add the flour and whisk until smooth.
- Add the vegan milk, vegan chicken broth, nutritional yeast, salt, and pepper.
- Bring to a boil and continue whisking for 2 minutes, or until thickened.
Makes 10 oz.
Vegan Cream of Chicken Soup Instructions
- Preheat the oven to 350°F.
- Grease a 9-inch-by-13-inch casserole dish with vegan butter.
- In a large bowl, combine the thawed tater tots, melted vegan butter, vegan cream of chicken soup, vegan sour cream, onion, 1 1/2 cups of the vegan cheddar cheese, and pepper.
- Spread the mixture into the prepared baking dish and top with the remaining vegan cheddar cheese.
- Bake 45 to 55 minutes, or until hot and bubbly.
