Jackfruit Nuggets

- 1 can young green jackfruit
For the marinade:
- 3 Tbsp. avocado oil
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
For the wet batter:
- 5 Tbsp. ground flax seeds
- 3/4 cup water
- 1/4 cup hot sauce
- 1 1/2 Tbsp. mustard
For the dry batter:
- 1 1/2 cups chickpea flour
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 1 tsp. dried thyme
- 1 tsp. dried parsley
Instructions
- Drain and rinse the jackfruit. Cut into nugget-size pieces.
- Combine the oil and marinade spices in a bowl. Add the jackfruit pieces and toss to coat fully. Set aside for at least 30 minutes.
- Combine all the wet batter ingredients in a second bowl. Mix well and set aside.
- Combine all the dry batter ingredients in a third bowl. Mix well and set aside.
- Dredge the jackfruit pieces in each batter twice.
- Warm some oil in a pan over medium heat and fry until golden and crispy. Let cool on a paper towel–lined plate. Serve with your favorite vegan dipping sauce.
